The food truck industry is booming, mainly because of the yummy food. And kids love the idea of getting food from a truck. Well, to be honest, so do I.

But one additional advantage is that you get to meet the chef face-to-face.

Blount County’s Vegetarian Food Truck

Meet Amber Simmons, the owner of the Wander Woman Eats food truck. Instead of the usual dining experience, you’ll find ol’ Gypsy, the vegetarian food truck. Amber serves you yummy and good-for-you vegetarian and vegan food.

Amber started Wander Woman Eats when she couldn’t find the kind of food she wanted to eat – vegan, light, delicious, and healthy. With her experience in the restaurant business, she knew she could provide that cuisine.

She started out serving only vegan food but found the vegetarian food truck approach with items to easily make vegan work better. Now more people can enjoy her food.

I asked Amber why she chose a food truck. She likes the idea of managing the food and experience herself. However, she confessed to sometimes recruiting family and friends when things get busy.

My Experience

My first visit to Amber’s food truck was at a downtown Maryville holiday fair. I chose the Campfire Nachos and a vegan latte.

As we strolled down Broadway, enjoying the decorations, I chowed down on my nachos. They rival the nachos from my pre-vegan days, extra-fresh and slightly smoky, like food you eat when camping. Now I get them every time, even if I am trying other entrees. Do you blame me?

It turns out that Campfire Nachos is one of Amber’s bestsellers, along with pizza.  Customers also enjoy her fresh-squeezed lemonade and golden milk.

Support The Only Vegetarian Option in Blount County

One of Blount County Vegan’s goals is to support restaurants that provide vegan options on their menu. You can see other Blount County restaurant options here.

But Wander Woman Eats is the only vegetarian option in our county. Friends, let’s show our support for Amber’s business and help her follow her dreams.
